Unicorn Ice Cream Cups 

 

Ingredients: 

For the Ice Cream Cups:

 

½ packet biscuits 

150g butter, melted 

Ola Rich & Creamy Magical Unicorn Frozen Dessert 

 

For the Whipped Cream:

1 ½ cups whipping cream 

1 drop pink food colouring (Pastel hues)

150g white chocolate 

 

For the Unicorn Toppers (optional):

1 packet of white fondant 

Edible gold dust  

 

Method: 

For the Ice Cream Cups:

1. Remove the ice cream from the freezer and allow to soften for 10minutes. 

2. Place a cupcake liner into each hole in a muffin tin. 

3. Crush the biscuits until finely crumbled and add the melted butter.

4. Once combined, press the biscuit mixture into the bottom of the cupcake liners to create a cookie base. 

5. Using an ice cream scoop, scoop the blue ice cream and press the ice cream into an even layer in each muffin tin. 

6. Repeat with a layer of pink ice cream and finish with a layer of purple ice cream. 

7. Place the muffin tin into the freezer to set for 1 – 2 hours. 

 

For the Whipped Cream:

1. Pour the whipping cream into a bowl and whisk on high speed until medium to stiff peaks form, about 1 minute.

2. Add a tiny drop of food colouring to the bowl and beat very quickly to incorporate evenly.

3. Melt the white chocolate over a bowl of hot water. Once melted, whisk the chocolate into the cream. Spoon into a piping bag and refrigerate for a few hours. 

 

For the Unicorn Toppers (optional):

1. Roll a small portion of fondant into a ball, roll out the ball on a surface into a cylinder shape. The cylinder should have a thicker center and thinner ends. 

2. Bring the two ends of the cylinder together to form a sealed teardrop shape. Pick up the teardrop shaped fondant and carefully twist the horn, keeping the top of the horn still with one hand. Paint the unicorn horn with edible gold dust and set aside to dry. 

3. For the ears, cut the fondant into two triangular shapes and press slightly into the center to create an ear like indent.

 

Assembly:

1. Remove the ice cream cups from the muffin tin. Starting in the center of each ice cream cup, make a swirl of frosting. ​

2. Top each ice cream cup with a set of unicorn ears and a unicorn horn. Serve and ENJOY immediately!
