Ingredients:
For the Meatballs:
500g beef mince
½ cup bread crumbs
1 egg, beaten
¼ cup milk
¼ cup BBQ sauce
1 tsp. salt
1 tbsp chopped fresh parsley
½ tsp pepper
1 ½ cups grated cheddar cheese
½ cup Hellmann’s Mayonnaise
For the Onion Bombs:
5-6 large yellow/white onions
200g streaky bacon
For the Mayo Dip:
½ cup Hellmann’s Mayonnaise 
1 tsp cayenne pepper
2 tsp smoked paprika
1 tbsp chopped chives
Salt and pepper, to taste
Method:
1. Preheat the oven to 180°C.
2. Mix the mince, bread crumbs, egg, milk, BBQ sauce, salt, parsley and pepper together, in a large bowl with your hands until well combined. Line a sheet pan with foil and set aside.
3. Mix the grated cheddar cheese with the Hellmann’s mayonnaise and stir until well combined.
4. Slice the top and bottom off of an onion and peel off the skin.
5. Cut the onion in half and now peel back the layers. Use the two sides of the onion and see how large you need to make your meatball. Stuff the meatball with the cheesy mayo mixture and roll into a ball. Insert your meatball in the onion halves and make sure it fits nicely, not too small or too large.
6. Wrap each of the onion bombs with 3 slices of bacon depending on the size of the bomb and secure with toothpicks. Brush with oil.
7. Bake on the prepared sheet pan for 40 min. Brush liberally with BBQ sauce and bake another 5-10 min.
8. In a small bowl, combine Hellmann’s mayonnaise, cayenne pepper, smoked paprika and chives. Season with salt and pepper.
9. Serve meatballs with the spicy mayo dipping sauce & simple salad and ENJOY!
