Coconut Ice Christmas Trees

Makes 16

175g (1¾ cup) IMBO Medium Desiccated Coconut

100g sweetened condensed milk

150g icing sugar

¼ tsp green food colouring

Christmas themed sprinkles

  1. In a large bowl, mix together 1 cup of the IMBO Medium Desiccated Coconut with the condensed milk, icing sugar and green food colouring. Stir until everything is well combined and the mixture is green all the way through.

  2. Using a tablespoon, divide the mixture into evenly sized balls then flatten the base of each ball on the counter and pinch the top, gently shaping it into a cone shape. Roll each cone into the reserved coconut, all the while ensuring that it does not lose its shape and that the top of the cone is pointed and the bottom, flat.

  3. Once they resemble trees, decorate them with edible silver balls and edible sugar stars. Serve on a plate and ENJOY! Chef’s Tip: Perfect for gifting this festive season!
