INGREDIENTS
1 roll (400g) store-bought shortcrust pastry, defrosted
3 tbsp Nestlé Cremora
1 tin (385g) Nestlé Sweetened Condensed Milk
4 large eggs
3 tbsp cornflour

METHOD
1. Preheat the oven to 200ºC on fan-assist and grease a 24-hole mini muffin liner.
2. On a lightly floured surface, roll out the shortcrust pastry to 5mm. Using a 6cm cookie cutter, or glass of a similar size, cut 34 circles. Press 24 circles into the base of the muffin tin and prick the base with a fork.
3. Bake for 8 minutes until the pastry is golden brown and cooked through. Repeat this step to bake the remaining 10 pastry cups.
4. Allow the pastry cups to cool on a wire rack.
5. In a large microwavable bowl, add the Nestlé Cremora and 3 cups of water and whisk until dissolved. Add the Nestlé Sweetened Condensed Milk, eggs, and cornflour and whisk until combined.
6. Microwave the mixture for 15 minutes, whisking every 3 minutes to ensure the filling remains smooth.
7. Once the filling has thickened, allow it to cool slightly for 10 minutes.
8. Transfer the filling to a piping bag or zip-lock bag and neatly fill the pastry cups. Dust with cinnamon powder and allow it to set in the fridge for 2 hours.
9. Serve as the perfect dessert or tea time treat and ENJOY!
