Bulk Batch Crunchy Granola

INGREDIENTS


9 cups rolled oats

1 tsp ground cinnamon

2 ½ cups Cappy Orange Mango 100% Fruit Juice Blend 

1 cup neutral oil 

½ cup honey

2 cups fruit and nut mix, of choice 

1 cup seed mix of choice (optional)

1 cup toasted coconut flakes (optional)

METHOD


1. Preheat the oven to 150°C and line 2 large baking trays with baking paper. 


2. In a large bowl, mix together the rolled oats and 1 teaspoon of ground cinnamon. In a separate bowl, stir together the Cappy Orange Mango 100% Fruit Juice Blend, oil and honey until well combined.

Chef’s Tip: If your honey is too thick, warm it up slightly, just a few seconds in the microwave to make it easier to mix with the other liquids. Use coconut oil instead of vegetable oil for a healthier alternative! 


3. Pour the wet mixture over the dry ingredients and stir thoroughly, ensuring everything is evenly coated.

Chef’s Tip: Use a large metal spoon or your hands to ensure every piece is coated—this is key for getting the flavour into each bite and achieving a crunchy, even texture.


4. Spread about half the mixture onto each baking sheet in an even layer, about 1cm deep.

Chef’s Tip: Don’t overcrowd the baking tray! Spreading the granola too thickly will make it steam instead of bake, so aim for a thin, even layer.


5. Bake for 2 hours stirring every 20 minutes to ensure the granola browns evenly, until it turns a rich golden brown.


6. Remove from the oven, transfer the granola to a bowl, and let it cool completely before adding the fruit and nut mix, seed mix and coconut flakes. Once cool, store in an airtight container.

Chef’s Tip: The granola will crisp up as it cools, so don’t worry if it feels a little soft when it first comes out of the oven. Be patient and let it cool fully before storing to maintain crunchiness!


7. Serve the crunchy granola with milk or yoghurt alongside some fresh orange segments and mango pieces and ENJOY!
