Cremora Breakfast Nests



Makes 2

Hands-off time: 15 minutes


INGREDIENTS


1 tbsp NESTLÉ Cremora Original

2 large eggs

Salt and pepper, to season 

2 slices white bread 

2 tsp margarine, plus extra for frying

¼ onion, finely chopped 

2 rashers bacon, diced 

6 mushrooms, chopped

1 small tomato, finely chopped 

1 clove garlic, crushed

½ cup grated reduced-fat cheese


Serving suggestion:

½ avocado, sliced thinly

Chives, freshly chopped

Chutney-mayo


METHOD


1. Add the Nestlé Cremora Original, eggs and salt and pepper to a bowl and whisk until combined. Set aside until needed.


2. Cut a rectangle out of each slice of bread, ensuring the crust is intact. Spread the margarine on each side of the crusts and inner pieces of bread. Set aside until needed.


3. Heat a little margarine in a large pan on medium heat until melted. Add the onion and bacon and sauté for 3-4 minutes until browned. Add the mushrooms, tomato and garlic and sauté for a further 2-3 minutes until cooked. 


4. Shape the filling in the pan into 2 rectangles, slightly smaller than the size of the bread slices. Lower the heat then place the crusts over the filling, ensuring the crust makes contact with the pan, encasing the filling. 


5. Slowly pour the egg mixture over the filling and allow it to cook through for about 2 minutes. 


6. Cover the filling with cheese then top with the cut-out inner bread rectangles. Flip the pieces of bread and cook on the other side for about 2-3 minutes until golden brown and the cheese has melted. 


7. Serve with sliced avocado, chopped chives and chutney-mayo and ENJOY!
