No-Fuss Coffee Cheesecake

INGREDIENTS

500g low-fat smooth cottage cheese, at room temperature

¾ cup (150g) brown sugar

1 ½ tbsp NESCAFÉ Classic Coffee

4 large eggs

¼ tsp salt

2 tsp vanilla essence

2 cups (500ml) whipping cream

⅓ cup (40g) cake flour


METHOD

1. Preheat the oven to 230°C. Grease a 20cm round springform cake tin with non-stick cooking spray. Crumple a sheet of baking paper for a textured look, then use it to line the base and sides of the tin, ensuring it extends slightly above the rim. *Chef’s Tip: Crumpling the baking paper first makes it more pliable and easier to fit neatly into the tin.


2. Add the cottage cheese, brown sugar, and NESCAFÉ Classic Coffee together until the sugar and coffee to a large mixing bowl and whip with an electric beater until the sugar and coffee are almost fully dissolved.


3. Add the eggs and salt, then beat until well incorporated.


4. Mix in the vanilla essence and fresh cream, beating until smooth.


5. Sift in the flour and gently fold it into the batter until just combined. Strain the mixture through a sieve and pour the mixture into a prepared baking tin and bake for 40 minutes. *Chef’s Tip: Don’t worry if the top of your cheesecake looks quite dark—that’s exactly what makes a Basque cheesecake special! The deep carameliSation creates a rich, toasty flavour and serves as the base since this cheesecake is baked without a crust 🔥🍰


6. Allow to cool at room temperature then chill in the refrigerator overnight to allow the flavours to develop and the cheesecake to set.
