Twice-as-Nice Cookies

Makes 30

 

INGREDIENTS

 

For the chocolate cookie dough:

2/3 cup sugar

½ cup margarine

1 egg

11/3 cups cake flour, sifted

½ tsp bicarbonate of soda

6 tbsp Nestlé Cocoa 

 

For the choc-chip cookie dough:

¼ cup margarine

½ cup sugar

1 egg

1 cup cake flour

½ tsp bicarbonate of soda

1/3 cup chocolate chips 

 

METHOD

 

For the chocolate cookie dough:

 

  1. Cream sugar and margarine until light and fluffy. Add the egg into the mixture, beating well. 

  2. Sift together the flour and bicarbonate of soda and fold into the wet mixture.

  3. Sift in the cocoa powder and mix well. 

  4. Cover and refrigerate for 30 minutes. 

 

For the choc-chip cookie dough:

 

  1. Cream together margarine and sugar until smooth, then add egg and beat well. 

  2. Sift together flour and bicarbonate of soda and fold into the creamed margarine. Mix in the chocolate chips and bring together to form a dough. 

  3. Cover and refrigerate for 30 minutes. 

 

To assemble:

 

  1. Preheat the oven to 180°C and line a large baking tray with baking paper.

  2. Divide each dough into 30 equally sized pieces. Press a piece of cookie dough together with a piece of brownie dough and roll them into a small ball. Repeat with the remaining dough pieces.

  3. Press the cookies down with the back of a spoon until ½ cm thick.

  4. Bake in the oven for 12-15 minutes or until the choc chip cookie side is golden. 

  5. Allow to cool and ENJOY!
