INGREDIENTS
3 slabs (100g each) dark chocolate, roughly chopped
1 bag (145g) Doritos Flamin Hot Nacho Cheese Flavoured Corn Chips
METHOD
Method 1: Classic Bark
1. Line a large baking tray with baking paper, smoothing out any creases. Set aside on a flat surface near the fridge.
2. Place roughly chopped dark chocolate into a microwave-safe bowl. Microwave in 30-second bursts, stirring well between each interval, until fully melted and smooth. This should take about 2–3 rounds. *Chef’s tip: Overheated chocolate will seize and turn grainy. Low and slow is the move. If you have a double boiler, use it for even more control.
3. Pour the melted chocolate onto the lined tray and use a spatula to spread it into an even layer, roughly 3–4mm thick. Don't make it too thin or the bark will be too brittle to handle.
4. While the chocolate is still warm and fluid, roughly crush the Doritos directly over the top, some chunky pieces, some finer crumbs. Press them lightly into the surface so they stick once set. *Chef Tip: Vary the size of the Doritos pieces for the best texture and visual effect. A mix of large shards and fine crumbs gives every bite a different crunch.
5. Cover the tray with cling wrap and transfer carefully to the fridge. Leave to set for a minimum of 1 hour, or until completely firm.
6. Once fully set, remove from the fridge and break into rough shards by hand. Serve immediately and ENJOY!
Method 2: Trending Bag Hack
1. Place 300g roughly chopped dark chocolate into a microwave-safe bowl. Microwave in 30-second bursts, stirring well between each interval, until fully melted and smooth.
2. Open the Doritos bag and pour the melted chocolate directly inside, over the chips. Crush the bag with your hands to break up the chips and to combine the chocolate. Fold the top of the bag over twice to seal it tightly. Gently shake and turn the bag to coat every chip evenly in chocolate.
3. Lay the bag flat on its side in the fridge. Press down gently to flatten the contents into an even layer. Leave to set for a minimum of 1 hour.
4. Once fully set, carefully tear open the bag and tip out the solid chocolate-chip slab. Roughly cut or break into chunks, serve and ENJOY! *Chef Tip: The bag hack gives you a thicker, chunkier result than the classic bark, every piece is packed with whole Dorito chips fully encased in chocolate.
