INGREDIENTS

2 cups White Star Super Maize Meal

6 tbsp butter

1 tsp salt

¼ cup vegetable oil

2 tins (410g each) spicy chakalaka, heated


Serving Suggestion:

Green dhania sauce/chutney/pesto

Fresh coriander leaves

METHOD

1. Line a 25x20cm baking tray with plastic wrap, leaving a slight overhang on the sides. Lightly grease the plastic wrap with a little oil. *Chef’s tip: this will help you lift the set maize meal out cleanly later.


2. Add 6 cups of water to a large pot and place over high heat. Slowly pour the White Star Super Maize Meal in a steady stream while stirring constantly with a wooden spoon. Add salt and continue stirring to ensure everything is fully incorporated and smooth. Bring the mixture to a boil, then reduce the heat to a gentle simmer and cook for 20 minutes, stirring occasionally to prevent it from sticking to the pot


3. Once the maize meal thickens, add 6 tablespoons butter. Stir continuously for 2–3 minutes until the butter has fully melted and the mixture is thick enough to pull away slightly from the sides of the pot. The consistency should be like resemble a thick porridge.


4. While hot, pour the maize meal mixture into the prepared lined baking dish. Working quickly, use a wet spatula or the back of a wet spoon to spread it out into an even, flat layer approximately 2-3cm thick. Smooth the top as flat as possible. Cover the surface with a sheet of plastic wrap, ensuring it makes direct contact with the maize meal. Refrigerate for at least 2 hours.


5. Remove the baking tray from the fridge and remove the plastic wrap on top of the maize meal. Place a large chopping board over the baking tray and carefully flip to release the slab of maize meal. Peel the plastic wrap off the slab. Using a sharp knife, cut the slab into rectangular pieces around 8cmx4cm in size.


6. Gently brush vegetable oil over both sides of each piece of pap and place on a braai grid over medium heat coals. Braai on each side for around 5 minutes until slightly charred, using a metal spatula to flip. Remove from the braai once cooked.


7. Add the hot chakalaka to a wide platter. Arrange the pap pieces over the chakalaka, drizzle green dhania sauce/chutney over the dish, garnish with fresh coriander leaves and ENJOY!

Braaied Pap & Chakalaka
