INGREDIENTS
For the Frikkadels:
500g beef mince
1 onion, finely chopped
2 slices of white bread
½ cup milk
1 Tbsp parsley, chopped
2 Tbsp barbeque spice
Vegetable oil for brushing
For the Noodle Bake:
1 can (410g) Lucky Star Hot & Spicy Chakalaka
1 cup fresh cream
1½ cups cheddar cheese, grated
3 packs Lucky Star Beef Flavoured Instant Noodles
Serving suggestion:
Chopped parsley
METHOD
1. Preheat the oven to 180°C and prepare an oven safe dish or deep baking tray by lightly brushing the bottom with oil.
2. Place the bread slices in a shallow bowl and pour the milk over allowing it to soak into the bread. Once the bread is soft, roughly mash it with a fork and set aside.
3. In a large mixing bowl, combine the mince, chopped onion, soaked bread, parsley and barbeque spice. Mix until everything is well combined, then shape the mixture into bite-sized meatballs.
4. Place the frikkadels in the prepared oven dish, making sure not to overcrowd them. Lightly brush the tops with oil, then bake for 25–30 minutes, or until golden brown and cooked through.
*Chefs tip: by not overcrowding the baking dish, the frikkadels are able to brown more evenly.
5. Remove the frikkadels from the oven, carefully transfer them to a plate, and set aside. In the same oven dish, mix together the chakalaka, cream, 2 cups of water and half the grated cheese.
6. Remove the 3 beef flavoured seasoning sachets from the noodle packets and add them to the mixture. Stir well to ensure the seasoning is evenly incorporated.
7. Split the Lucky Star Instant Noodle cakes in half and arrange them evenly in the baking dish, making sure they are fully submerged in the chakalaka and cream mixture.
*Chefs tip: for a saucier noodle bake, add another ½ cup of water.
8. Bake for 10 minutes, turning the noodle cakes halfway through. After 10 minutes, they should have softened and loosened enough to break apart easily. Give everything a good mix, then arrange the frikkadels evenly over the mixture, gently pressing them down so they are partially submerged in the liquid.
9. Sprinkle the remaining grated cheese over the top and place the dish back in the oven for 10 - 15 minutes. The cheese should look nicely melted and the frikkadels browned.
10. Remove from the oven and garnish with chopped parsley. Serve and ENJOY!
