INGREDIENTS
1 tin (410g) cream style sweetcorn
1 tin (410g) corn kernels in brine, drained
4 large eggs
½ cup (100g) melted butter
⅓ cup + 1 tbsp (100ml) milk
1¼ cups (150g) self-raising flour
1 tsp baking powder
1 tsp salt
1 (120g) packet Simba Creamy Cheddar Flavoured Potato Chips
METHOD
1. Preheat the oven to 180°C and spray a deep medium baking dish with non-stick spray.
2. Whisk together sweetcorn, eggs, melted butter and milk in a large bowl. Fold in the flour, baking powder and salt.
3. Remove half of the Simba Creamy Cheddar Flavoured Potato Chips and set aside. Using a rolling pin, lightly crush the remaining chips in the bag. Fold the crushed chips into the batter.
4. Pour the batter into the prepared dish and add the remaining chips, lightly crushing with hands, over the batter. Bake for 1 hour or until a skewer inserted into the centre comes out clean. *Chef’s tip: If the top is browning too fast before the centre sets, loosely cover with foil.
5. Slice, serve warm with a braai spread and ENJOY!
