Makes: 1 gammon

Hands-on time: 10 minutes

Hands-off time: 2 hours

INGREDIENTS

🍖 1(2kg) SPAR TENDER AND TASTY GAMMON BONELESS UNCOOKED

🍖 2 tbsp crushed garlic cloves

🍖 ½ tsp each salt and pepper (optional)

🍖 3 large SPAR Freshline Carrots

🍖 2 large SPAR Freshline Onions

🍖 ¼ cup apricot jam

Serving suggestion:

Steamed green vegetables

Mashed potatoes

METHOD

1. Preheat the oven to 180°C on the fan-assisted setting.

2. Add the SPAR TENDER AND TASTY GAMMON BONELESS, crushed garlic, salt and pepper, if using, to a rectangular, 32 x 19 x 6.5cm roasting dish. *Chef’s Tip: Any aromatic spices and vegetables can be added!

3. Add 3 cups of hot water and cover with a lid or foil. Place the dish in the oven for 2 hours, flipping the gammon over at 1 hour.*Chef’s tip: Gammon cooking time is calculated by 30 minutes per 500g.

4. In the meantime, peel and roughly chop the SPAR Freshline Carrots and SPAR Freshline Onions.*Chef’s tip: Any slow-cooking SPAR Freshline vegetables can be added here!

5. Remove the gammon from the oven. Reserve 2 tablespoons of water from the baking dish and discard the rest.

6. Add the apricot jam to the reserved water and mix until the jam has dissolved. *Chef’s Tip: If the jam is not dissolving, microwave the mixture for 30 seconds.

7. Use a sharp knife to cut off and discard the twine and skin from the cooked gammon. When removed, score a pattern into the fat layer.

8. Arrange the prepared onions and carrots in the baking dish. Use a basting brush to spread the apricot jam mixture over the gammon. Bake for 15-20 minutes, basting every 10 minutes, until the gammon is glossy and sticky.

9. Serve two slices of gammon alongside the carrots, onions, steamed green vegetables, mashed potatoes and ENJOY!
