INGREDIENTS

1 bag (500g) pre-cut pumpkin cubes

¾ cup White Star Super Maize Meal

3 tbsp brown sugar

2 tbsp butter, plus extra for serving

Pinch of salt


Serving Suggestion:

Sautéed vegetables, of choice (we used spinach & mushrooms)

METHOD

1. Bring 2 cups of water in a medium-sized pot to a boil. Add the pumpkin cubes and simmer for 20 minutes until soft. Switch the heat off and use a potato masher to puree the pumpkin along with the remaining water in the pot.


2. In a bowl, add the White Star Super Maize Meal and 2 cups of water and whisk to combine. *Chef’s Tip: Combining the maize meal with water before cooking prevents lumps!


3. Place the pot with the pumpkin puree over medium heat. Slowly add the maize mixture to the pot and mix continuously with a wooden spoon until thick and smooth.


4. Lower the heat and simmer for 15-20 minutes, stirring occasionally to avoid the mixture from sticking to the pot.


5. Switch the heat off, stir in the sugar, butter and a pinch of salt.


6. Serve warm with extra butter and sautéed veggies and ENJOY!
