INGREDIENTS

4 cups Bokomo Traditional Rolled Oats

2 ripe bananas

2 eggs

2 cups milk

2 tbsp honey

2 tsp vanilla essence

2 tsp baking powder

2 tsp bicarbonate of soda

2 tsp salt

Butter or non-stick spray


Toppings:

  • Banana slices and peanut butter

  • Blueberries and yoghurt

  • Melted chocolate and a pinch of sea salt

METHOD

1. Add all the ingredients to a blender and blend until the batter is smooth, scraping down sides as needed. Rest the batter for 5 minutes. *Chef’s tip: this recipe works well in a regular blender or a hand blender!


2. Divide the batter evenly into three greased 570ml oven safe glass bowls. Fold blueberries into the first, chocolate chips into the second. Leave the the third batter plain as it will be topped with freshly sliced bananas after baking.


3. Bake the pancakes in the oven for 30 minutes or until a skewer inserted into the centre of the pancakes come out clean.


4. Enjoy warm straight from the container or pop the lid on and enjoy the next day for breakfast. Reheat in a microwave, put on the toppings and ENJOY!
