INGREDIENTS

For the pudding:

½ cup White Star Super Maize Meal

2 ½ cups full-cream milk

½ cup fresh cream

2 tablespoons brown sugar

2 teaspoons ground cinnamon

1 tablespoon vanilla essence


For the apple compote:

3 apples (Granny Smith or Golden Delicious), peeled, cored & diced

2 tablespoons brown sugar

1 tablespoons butter

1 teaspoon ground cinnamon

1 tablespoons lemon juice

METHOD

1. Melt 1 tablespoons butter in a small pot over medium heat. Add the diced apples, 2 tablespoons brown sugar, 1 teaspoon ground cinnamon and 1 tablespoon of lemon juice. Stir and cook until the apples are soft and slightly caramelised but still hold their shape.⁣

2. Pour 2 ½ cups full-cream milk and ½ cup fresh cream into a medium pot. Add 3 tablespoons brown sugar, 2 teaspoons ground cinnamon, 1 tablespoon vanilla essence and whisk in ½ cup White Star Super Maize Meal. Warm this mixture over medium heat.⁣

3. Reduce heat to low and stir continuously until the mixture thickens to a smooth, creamy porridge consistency.⁣

4. Remove from heat and stir in 1 tablespoons salted butter until melted and the pudding is glossy and silky smooth.⁣

5. Spoon a generous layer of apple compote into the base of each serving glass or bowl. Ladle the hot spiced maize pudding over the top.⁣

6. Dust with a little extra ground cinnamon. Serve immediately while warm and ENJOY! ⁣
