INGREDIENTS

For the mocktails:

4 limes, halved

2 oranges, quartered

4 cans (200ml each) Schweppes Premium Pomegranate Flavoured Drink

Garnish:

8 pieces of orange rind

Edible flowers


For the popsicles:

2 cans (200ml each) Schweppes Premium Pomegranate Flavoured Drink

400ml water

4 limes, juiced

2 oranges, juiced

8 pieces of orange rind

METHOD

For the mocktails:

1. Place the mocktail glasses into the freezer to chill. Prepare the garnish by cutting 4 of the pieces of orange rind to form a miniature flower bouquet, as demonstrated in the Foodies video. Set aside.


2. Squeeze a quarter of an orange and half a lime into each of the 4 chilled mocktail glasses. Top each glass with a can of Schweppe Premium Pomegranate Flavoured Drink . *Chef’s Tip: Roll the limes and oranges between a counter and your hand to allow for easier juicing.


3. Garnish with the orange bouquets, twist the remaining orange rind pieces over the mocktails releasing their oils over the mocktails. Serve & ENJOY!


For the popsicles:

4. Prepare the garnish for the popsicles by trimming the orange rind pieces into neat rectangles. Cut thin long strips of the orange rind. Divide the orange strips between the plastic cups used as popsicle moulds.


5. Combine the popsicle ingredients in a jug. Pour just enough of the popsicle mixture into each cup to just cover the orange rind pieces. Transfer to the freezer for at least 1 hour or unti frozen solid. *Chef’s Tip: Freezing this small about initially will ensure your garnishes freeze first and remain at the top of the popsicle when unmoulded.


6. Once frozen, top the popsicle moulds with the remaining mixture. Secure an ice cream stick between two clothing pegs and place over the plastic cup, ensuring the ice cream stick is in the middle of the cup. Repeat with all of the popsicles. Freeze for at least 4 hours or until solid. * Chef’s Tip: This method of using the clothing pegs can be used to freeze the popsicles in any container that isn't necessarily a popsicle mould.


7. Place the popsicle mould under running water to remove the popsicles easily. Serve over a tray or bowl of ice and ENJOY!
