INGREDIENTS

1 tin (400g) Lucky Star Pilchards in Tomato Sauce

1 tbsp (15ml) fresh lemon juice

Salt and pepper, to taste

2 cups cooked white rice


If making pilchard mayo, you'll also need: 

4 tbsp mayonnaise


Serving Suggestion:

Spring onion

Cucumber slices

Avocado

Julienne carrots

Spicy mayonnaise

METHOD

If you prefer whole pilchards:


1. Carefully open the tin of Lucky Star Pilchards. Remove the pilchards from the can and set aside. Pour off the tomato sauce into a separate bowl. Drizzle the lemon juice over the fish and season lightly with salt and pepper.


2. Divide the cooked white rice between two serving bowls.


3. Add sliced cucumber, avocado and julienne carrots. Drizzle with spicy mayonnaise, garnish with chopped spring onion and ENJOY!


If you prefer pilchard mayo:


1. Prepare your Lucky Star Pilchards in Tomato Sauce by removing the fillets. Carefully debone them using a fork and discarding the bones, if preferred. Add the deboned pilchards to a shallow bowl and shred them using the back of a fork.


2. Add the mayonnaise and stir until well combined. Add a squeeze of fresh lemon juice and a crack of salt and black pepper. Mix until well combined. Divide the cooked rice between two bowls. Place a large scoop of the pilchard mayo mixture in the center of the rice bowl.


3. Surround the pilchard mayo with sliced cucumber, avocado and julienne carrots. Drizzle with some spicy mayonnaise, garnish with chopped spring onion and ENJOY!
