INGREDIENTS
1 packet (145g) Doritos Cheese Supreme Flavoured Corn Chips
2 cups chicken breast, cooked & finely chopped
1 cup grated gouda cheese, plus 10 1cm cubes
½ cup spicy mayonnaise, plus extra for dipping
¼ cup chives, finely chopped plus extra for garnish
2 large eggs, beaten
METHOD
1. Open a small corner of the Doritos Cheese Supreme Flavoured Corn Chips to release the air in the bag. Using a rolling pin, carefully bash the chips into fine crumbs.
2. In a large mixing bowl, add ⅓ of the crushed chips along with the chicken, cheese, mayonnaise and chives. Mix the ingredients until well combined.
3. Using your hands, create 10 flat disks with the mixture. Add a block of cheese to the centre of each disk and carefully enclose the cheese with the mixture. *Chef’s Tip: Lightly grease your hands beforehand for easy rolling!
4. Shape the mixture into 10 small eggs and set aside.
5. Sprinkle the remaining crushed chips onto a large plate and add the beaten eggs to a wide bowl.
6. Carefully coat each ball in the egg mixture before rolling through the crushed chip crumbs to form the crunchy exterior. Ensure to maintain the egg shape throughout the dredging process.
7. Air fry at 160°C for 10 minutes until the coating is crispy and the cheese centre has melted. *Chef’s Tip: Alternatively, oven bake for 12 minutes at 180°C.
8. Arrange the balls on a platter, garnish with freshly chopped chives, serve with extra spicy mayo and ENJOY!
