1 packet (145g) Doritos Grilled BBQ Flavoured Corn Chips
1 tray (500g) extra lean beef mince
6 mini white flour wraps
6 slices cheddar cheese
SERVING SUGGESTION:

METHOD
1. Open the bag of Doritos Grilled BBQ Flavoured Corn Chips and transfer most of the chips into a bowl, leaving behind around one cup in the bag. Set the chips in the bowl aside to use later.
2. Using a rolling pin, lightly crush the Doritos into a fine crumb. Add the crushed chips and beef mince to a bowl and mix until just combined. *Chef’s Tip: Avoid overmixing the meat, as this may toughen the texture.
3. Place the six mini wraps on a clean counter, spaced out, and divide the mince between each wrap. Using a fork, carefully spread the mince to cover the entirety of each wrap.
4. Place a frying pan over medium-high and lightly grease with vegetable oil. Place the wrap, meat side down and fry for 2 minutes until brown and crispy. Flip the wrap, lower the heat, and add a slice of cheese over the mince. Cook for another 1-2 minutes until the taco is golden brown at the bottom, and the cheese has melted. Repeat this step until each taco is cooked.
5. Serve the tacos on a large platter or chopping board. Add guacamole, shredded lettuce, fresh tomato salsa, reserved chips and hot sauce of choice to each taco. Serve while hot, and ENJOY! *Chef’s Tip: Add any toppings of choice to customise the tacos!
