INGREDIENTS
2 tbsp sesame oil
4 spring onions, thinly sliced (reserve some for garnish)
4 garlic cloves, minced
4 cups vegetable or chicken stock
6 tbsp Vital Health Foods Soy Sauce Original
3 tbsp rice vinegar (or white vinegar)
1 tbsp fish sauce
1 tbsp chilli oil, plus extra for serving
12–14 store-bought dumplings (frozen or fresh)
1 cup green vegetables like spinach or bok choi (optional)
SERVING SUGGESTION:
Lime juice, Sesame seeds & chilli oil
METHOD
1. Heat the sesame oil in a medium pot over medium heat. Add the spring onions and garlic and cook for 1–2 minutes, until fragrant.
2. Pour in the stock and stir in the Vital Health Foods Soy Sauce Original, vinegar, fish sauce and chilli oil. Bring to a gentle boil.
3. Add the dumplings and green vegetables, if using. Simmer for 5–7 minutes, or until the dumplings are cooked through and the greens have wilted.
4. Taste and adjust the seasoning with more soy sauce, vinegar, fish sauce or chilli oil, if needed.
5. Add the spinach to the bowls, then ladle the soup over and squeeze the juice of 2 limes into the soup. Garnish with the reserved spring onions, a drizzle of chilli oil, and a sprinkle of sesame seeds. Serve warm and ENJOY!
