INGREDIENTS

2 limes, cut into 8 slices, plus extra for garnish
4 sprigs mint, plus extra for garnish
2 cans (300ml each) Lipton Lemon Flavoured Ice Tea, chilled
1 can (300ml) ginger beer, chilled

METHOD

1. In a 4-hole popsicle mold, add 2 slices of lime and a sprig of mint to each pop. Divide 1 can of Lipton Lemon Flavoured Ice Tea between the 4 pops, ensuring to cover all the garnish. Add a wooden popsicle stick to each pop and freeze for 2 hours until solid. *Chef’s Tip: make the pops in advance to have them handy for any occasion!


2. Divide a can of ice tea and a can of ginger beer between 4 short glasses, ensuring the glasses are about ⅔ full.


3. Remove the frozen pops from the mold and add one to each glass, garnish with a slice of lime and a sprig of mint and ENJOY! *Chef’s Tip: using a popsicle instead of ice ensures your drink stays flavourful from beginning to end!
