4 large potatoes, peeled and boiled until tender
¼ tsp Royal Baking Powder
2 russian sausages, finely diced and fried
1 cup cheddar cheese, grated
2-3 tbsp chip spice, plus extra to season after frying
½ cup cake flour
1 large egg, beaten
1 cup seasoned bread crumbs
Vegetable oil, to fry

METHOD
1. In a large mixing bowl, add the boiled potatoes and Royal Baking Powder and mash to form fluffy mashed potatoes. Add the russian sausage, cheese and chip spice and mix until combined. *Chef’s Tip: the addition of Royal Baking Powder ensures the mash is extra fluffy!
2. Divide the mixture into 18 small balls and set aside.
3. Prepare a breading station with the flour, egg and breadcrumbs in separate bowls.
4. Dip the bites into the flour, then egg mixture, then the breadcrumbs, handling 2-3 at a time, ensuring the bites are evenly coated.
5. Heat 3 cups of vegetable oil in a small, deep pot over medium-high heat, ensuring there is enough oil to fully submerge the bites.
6. Fry the bites, about 4 at a time, for 1-2 minutes until golden brown and the cheese has melted. Repeat this until all the bites have been fried. *Chef’s Tip: avoid over frying to ensure bites remain intact or double coat the bites!
7. Transfer the fried bites to a plate lined with paper towel to drain the excess oil and season with extra chip spice.
