1⁄3 cup (75g) softened butter, plus extra for frying
3⁄4 cup diced fruit, of choice
1 large egg
1⁄4 cup milk
1 cup cinnamon-sugar

METHOD
1. Using a bread knife, cut the crusts off each slice of Sunbake Sourdough Bread. *Chef’s Tip: Bake and blend the crusts to make
breadcrumbs for other Foodies of SA recipes!
2. Use a rolling pin to flatten the bread. Spread the butter over the bread and add about 1 teaspoon of diced fruit to the bottom edge
of the bread. Roll the bread slice, similarly to a swiss roll, ensuring the fruit is encased and the edges are sealed. Repeat this for each
slice of bread to achieve 12 roll-ups.
3. Heat a large frying pan on medium heat and add 2 tablespoons of butter.
4. In a mixing bowl, whisk the egg and milk together until combined. Dip each roll-up into the egg mixture, ensuring it’s fully coated then
add it directly to the prepared frying pan. Repeat this for every roll-up.
5. Cook the roll-ups in the pan, turning them occasionally to ensure they have evenly browned. This should take between 4-5 minutes.
*Chef’s Tip: If your pan is too small, cook the roll-ups in batches.
6. Add the cinnamon-sugar to a bowl. Coat each roll-up while it’s still warm to ensure the cinnamon-sugar sticks.
7. Serve warm with a drizzle of chocolate sauce and fresh fruit and ENJOY!
