INGREDIENTS

For the cake:

½ cup (56g) Nestlé Cocoa Powder

1 ¼ cups (160g) cake flour, sifted

1 ½ cups (285g) white sugar

1 tsp (5g) bicarbonate of soda

1 tsp (5g) baking powder

Pinch of salt

2 large (about 1 cup/240g) ripe bananas, mashed

2 large eggs

½ cup (125ml) oil

⅔ cup (150ml) water


For the icing:

½ cup (113g) salted butter, softened

1 tub (250g) cream cheese, softened

½ cup (113g) peanut butter, or any nut butter of choice

2 tsp (10ml) vanilla essence

4 cups (480g) icing sugar, sifted


SERVING SUGGESTION:

Nestlé Cocoa Powder

METHOD

1. Preheat the oven to 175°C and grease and line a 18x23cm baking tray.


2. In a large bowl, whisk together the flour, sugar, Nestlé Cocoa Powder, bicarbonate of soda, baking powder, and salt.


3. In a separate bowl, mix the mashed bananas, eggs, oil, and water until well combined. Add the wet ingredients to the dry ingredients and stir gently until just combined—ensure to not overmix the batter.


4. Pour the batter into the prepared baking tray and bake for 30–35 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool completely on a wire rack.


5. In a large bowl, beat the butter and cream cheese together until smooth and creamy.


6. Add the peanut butter and vanilla essence, and mix until well incorporated.


7. Gradually add the icing sugar, beating until the icing is fluffy and spreadable.


8. Spread over the cooled cake and decorate with more Nestlé Cocoa Powder. Slice, serve and ENJOY!
