INGREDIENTS
1 tray (600g) chicken meatballs
4 tbsp oil
3 garlic cloves, thinly sliced
1½ cups PnP Fresh Cream
Salt and pepper, to taste
2 cups finely grated Parmesan cheese/any hard cheese, plus extra for serving
1 packet (200g) PnP Baby Spinach
Lemon juice, to taste
SERVING SUGGESTION:
Creamy mashed potatoes
Chopped chives
Sundried tomatoes
METHOD
In a large pan over medium heat, add a drizzle of oil and brown the meatballs for 6–8 minutes, turning occasionally, until golden and cooked through. Remove the meatballs from the pan and set aside. In the same pan, add a bit of oil to begin making the sauce. *Chef’s tip: All your ingredients can be delivered straight to your door with the Mr D app—at the same price as in store!
Add the garlic and cook for 1 minute, until fragrant. Pour in the Pick n Pay Fresh Cream and bring to a gentle simmer, allow to simmer for 2 minutes. Then, stir in salt, pepper, and parmesan cheese and whisk until smooth and melted. Add the Pick n Pay Baby Spinach and cook for 1–2 minutes, until wilted.
Add the cooked meatballs to the sauce and simmer for another 2 minutes, spooning the sauce over the meatballs to coat. Add lemon juice to taste.
Serve hot with a generous spoonful of buttery mashed potatoes, a sprinkle of chopped chives and sundried tomatoes and ENJOY!
