Strawberry Milkshake Cupcakes

INGREDIENTS

For the cupcake batter: 

3 large eggs 

¾ cup vegetable oil 

1 bottle (275ml) Danone Ultra Mel Strawberry Flavoured Milkshake 

1 box (600g) store-bought vanilla cake mix 


For the icing: 

½ cup (125g) butter, room temperature  

1 packet (400g) store-bought vanilla icing powder

¼ cup Danone Ultra Mel Strawberry Flavoured Milkshake


Serving suggestion:

Sprinkles

Method 

For the cupcake batter:

1. Preheat the oven to 180°C and line two 12 hole muffin trays with cupcake liners. 


2. Add the eggs, oil and 1 bottle Danone Ultra Mel Strawberry Flavoured Milkshake to a large mixing bowl and beat until well combined. *Chef’s tip: Use your favourite Danone Ultra Mel Flavoured Milkshake 


3. Add the cake mix and beat until just combined. Chef’s tip: Avoid over mixing the batter to ensure the cupcakes are light and fluffy. 


4. Spoon ¼ cup of batter into each cupcake liner, making sure they are ⅔ full. 


5. Bake for 15 minutes until the cupcakes are risen and firm. 


For the icing: 

6. While the cupcakes are baking, make the icing. Add the butter, store-bought vanilla icing mix and ¼ cup of Danone Ultra Mel Strawberry Flavoured Milkshake into a large mixing bowl. Use an electric beater to beat the mixture until smooth. 


7. Add the icing to a piping bag with a star nozzle and refrigerate until needed. *Chef’s tip: We used a NZ22 sized star nozzle 


8. Once the cupcakes are baked, remove from the oven and allow to cool for 10 minutes before icing. 


9. Pipe the icing onto the cupcakes, decorate with sprinkles, serve in a lunchbox or on a large serving platter and ENJOY!
