½ packet (250g) pasta, of choice
1 tin (400g) Lucky Star Pilchards in Tomato Sauce
½ large white onion, diced
2 cloves garlic, minced
1-2 tsp dried chilli flakes
1 tsp dried Italian herbs
1 tin (410g) Lucky Star Tomato Puree
SERVING SUGGESTION:
Fresh basil leaves
METHOD
1. In a large pot of boiling salted water, add the pasta of choice and cook until al denté. Drain and rinse the pasta in a colander and set aside until needed. *Chef’s Tip: Reserve a cup of pasta water to loosen the sauce in step 5.
2. Remove the pilchards from the Lucky Star Pilchards in Tomato Sauce tin and transfer to a plate, reserving the sauce until needed. Carefully remove the bones from the pilchard fillets using a fork and set aside until needed. *Chef’s Tip: It is not necessary to remove the bones.
3. In a well oiled, large pan on medium heat, add the onions and sauté for 3-4 minutes until soft. Add the garlic, chilli flakes and dried herbs to the pan and stir until fragrant. Transfer the reserved pilchard tomato sauce to the pan along with the tin of Lucky Star Tomato Puree and stir.
4. Cover the pan and lower the heat to allow the sauce to simmer for 10 minutes.

5. Remove the lid, add the pilchard pieces and cooked pasta. Stir and simmer until well combined and the sauce sticks to the pasta. Add a portion or all of the pasta water, if needed, to achieve a smooth and beautiful sauce consistency.
6. Garnish with fresh basil leaves. Serve immediately or transfer to lunch box containers as the perfect meal prep and ENJOY!
