INGREDIENTS

1 tray PICK n PAY Live Well Lean Beef Mince

1 tbsp mild curry powder

½ tsp coriander powder

½ tsp cumin powder

1 tsp turmeric powder

½ tsp each salt & pepper, to taste

2 cloves garlic, crushed

2 tbsp fruit chutney, plus extra to serve

¼ cup raisins/sultanas

1 large egg

4 bay leaves

½ cup melted butter, to brush

6 sheets PICK n PAY Phyllo Pastry, defrosted


SERVING SUGGESTION:

METHOD

1. Preheat the oven to 180℃ and grease and line a round baking dish or pie dish with baking paper.


2. In a large mixing bowl, add the PICK n PAY Live Well Lean Beef Mince, mild curry powder, coriander powder, cumin powder, ½ teaspoon of turmeric powder, salt and pepper, garlic, chutney, raisins and egg. Using a spatula, mix the ingredients until combined. *Chef’s Tip: Avoid over mixing to ensure the filling remains tender.


3. To assemble your spiral pie, lay one sheet of Pick n Pay Phyllo Pastry flat on your counter. Whisk the remaining ½ teaspoon of turmeric into the melted butter then lightly brush the entire surface with yellow melted butter. Place a second sheet directly on top of the first and brush it with butter as well.


4. Along the bottom edge of the buttered phyllo sheets, spoon about ⅓ of the bobotie filling to form a long, even log. Carefully roll the pastry and filling together into a tube.*Chef's Tip: Roll the pastry loosely to ensure it’s flexible to shape into a spiral.


5. Place the filled pastry tube into your baking dish, starting from the center, and begin coiling it to form a spiral pattern. Repeat steps 3 and 4 two more times, filling the pastry and rolling it into a tube. Continue adding these filled tubes to the baking dish, extending the spiral until the dish is full.


6. Add a few bay leaves between the pastry layers and brush the top of the spiral with the extra melted butter. Bake for 25-30 minutes until golden brown and the filling has cooked through.


7. Once baked, allow the pie to cool for a few minutes. Slice and serve with a seasonal side salad and fruit chutney and ENJOY!
