INGREDIENTS

1½ cups (375g) White Star Super Maize Meal

2 tbsp butter

1 cup grated cheddar cheese

⅛ tsp each salt and pepper, to season
½ tray (175g) thin boerewors, cooked and sliced into small pieces

½ tin (205g) chakalaka


SERVING SUGGESTION:

Fresh coriander

METHOD

1. Prepare the pap by bringing a large pot with 2 cups of water and a pinch of salt to a boil. Stir in the White Star Super Maize Meal while whisking until a thick and smooth mixture forms. Cover, reduce to medium-low heat and allow the pap cook for 30 minutes. *Chef’s Tip: Keep an eye on it to ensure that the pap does not burn.


2. Remove the pot from the heat, add the butter, ½ cup of grated cheese and salt and pepper and stir to combine. Set aside to cool slightly for easy handling.


3. Preheat the oven to 180ºC and grease a 12-hole muffin tray well with non-stick cooking spray.


4. Shape the cups by dividing the mixture evenly between the 12 muffin cups and press it up the sides of each hole to form a cup-like shape. Bake the pap cups for 20-25 minutes to set and crisp up slightly. Remove the tray from the oven and set aside.


5. Divide the cooked boerewors pieces evenly between the pap cups. Top with an even amount of chakalaka and sprinkle the remaining ½ cup of cheese over the top. *Chef’s Tip: Make use of leftover braai meat & chakalaka!


6. Bake the pap cups for 10-15 minutes until the cheese is slightly golden and melted on the top. Remove the cups from the oven and allow them to cool slightly.


7. Serve the pap cups as the perfect snack or side dish and ENJOY!
