INGREDIENTS
6 (900g) skinless, boneless chicken breasts
2 cloves garlic, crushed
1 onion, finely chopped
1 cup basmati rice
3 cups (750ml) chicken stock, hot
1 cup (250ml) fresh cream
salt & black pepper, to taste
3 sprigs of parsley, finely chopped
Classic Chicken Spice Blend:
3 tsp Robertsons Paprika Spice
3 tsp Robertsons Italian Herbs
1½ tsp Robertsons Garlic Flakes
3 tsp Robertsons Chicken Spice
OR
Spicy BBQ & Garlic Blend:
3 tsp Robertsons Barbecue Spice
1½ tsp Robertsons Cayenne Pepper
1½ tsp Robertsons Crushed Garlic

Fragrant Chicken Curry Blend:
1½ tsp Robertsons Turmeric
3 tsp Robertsons Coriander
3 tsp Robertsons Crushed Chilli
3 tsp Robertsons Ground Cumin

METHOD
1. In a small bowl, combine the Robertsons Herbs and Spices for the spice blend of choice. Season the chicken breasts generously on all sides with the spice blend, reserving 1 tablespoon of spice to season the rice.
2. Heat a little vegetable oil in a heavy-bottomed saucepan over medium heat. Add the seasoned chicken breasts and cook for 5-8 minutes on each side until golden brown and fully cooked through. Remove the chicken from the pan and place it on a plate. Cover it with foil, then allow it to rest until the rice is cooked.
3. In the same pan, add the garlic and onion and cook until translucent. Add the reserved spice blend and allow to cook for 1 minute.
4. Add the rice and stir it into the fragrant mix, and allow this to cook for 1 minute. Add the hot chicken stock and bring this to the boil. Turn the heat to the lowest setting and simmer the rice for 8-10 minutes until the rice is cooked through, with the lid slightly open on the pan. Additional liquid can be added if needed. *Chef’s Tip: Adding hot stock to the rice shortens the cooking time and ensures the rice will cook more evenly.
5. Add the cream to the rice and stir it through. Season with salt and pepper to taste. Place the chicken back into the rice and allow the chicken to warm through on medium heat with the lid on.
6. Once warmed through, garnish with chopped parsley. Serve & ENJOY!
