INGREDIENTS
For the mocktails:
4 cups ice
1 tin (565g) whole pitted litchis in syrup
1 slice fresh lemon
4 cans (200ml each) Schweppes Dry Lemon
For the popsicles:
1 tin (565g) whole pitted litchis in syrup
6 slices fresh lemon
2 cans (200ml each) Schweppes Dry Lemon
METHOD
For the mocktails:
1. Remove 8 litchis from the tin and set aside. Cut the slice of lemon into quarters to form 4 triangles. Create 4 mocktail picks, by threading a litchi, then a piece of lemon, followed by another litchi. Once all 4 picks are assembled, set aside until needed.
2. Divide the ice between 4 glasses. Add 2 tablespoons of litchi syrup to each glass and top with Schweppes Dry Lemon.
3. Place the prepared picks over each glass and garnish with edible flowers, serve and ENJOY!
For the popsicles:
4. Add 2 litchis, a slice of lemon and 2 tablespoons of litchi syrup to each mould. Top with Schweppes Dry Lemon until the moulds are full. *Chef’s Tip: Alternatively, use paper cups instead of a mould!
5. Freeze for 2 hours until solid.
6. Place the popsicle mould under running water to remove the popsicles easily. Serve over a tray or bowl of ice and ENJOY!
