INGREDIENTS

The Mocktail:

2 tbsp fine salt

2 tbsp sugar

3 tbsp honey

Zest and juice of 2 limes

4 cans (300ml each) Schweppes Premium Pineapple Coconut Flavoured Drink

8-10 fresh mint leaves

1 cup toasted coconut flakes


The Popsicle:

2 cans (300ml each) Schweppes Premium Pineapple Coconut Flavoured Drink

1 cup toasted coconut flakes

Handful of fresh mint leaves

METHOD

For the mocktails:


1. To make the decorative ice, divide the toasted coconut flakes and lime slices between two ice trays. Fill the trays with water and a slice of lime and freeze until solid.


2. Prepare the lime sparkle rim by combining the sea salt, castor sugar, and freshly grated lime zest in a small bowl, then transfer the mixture to a small plate. Dip the rim of the glass in a small bowl of honey, then into the salt and sugar mix ensuring they are generously coated. *Chef’s tip: use any of your favourite citrus fruit!


3. In each glass, muddle the fresh mint leaves with 2 quarters of lime until it becomes a fragrant base.


4. Add the toasted coconut ice to the glasses and top each with a can of Schweppes Premium Pineapple  Coconut Flavoured Drink.


5. Garnish beautifully with fresh mint and a slice of lime and ENJOY!


For the popsicles:

6. Add the toasted coconut flakes, fresh mint leaves and lime slices into a 6-hole popsicle moulds.


7. Fill the moulds with Schweppes Premium Pineapple Coconut Flavoured Drink ensuring you leave a small space at the top for expansion.


8. Insert a popsicle stick into each mould and freeze for 6 hours or until completely solid.


9. Once the popsicles are frozen, place the popsicle mould under running water to remove the popsicles easily. Serve over a bed of ice to keep the colors vibrant and ENJOY!
