INGREDIENTS
½ cup (110g) Wellingtons Full Flavour Tomato Sauce
½ cup (145g) Wellingtons Mild Chutney
1 clove (5g) garlic, crushed
Salt and pepper to taste
½ (25ml) lemon, juiced
4 chicken thighs
4 chicken drumsticks
METHOD
1. In a bowl combine the Wellington’s Full Flavour Tomato Sauce, Wellington’s Mild Chutney, garlic, seasonings and lemon juice. Reserve ½ cup of this marinade for basting the chicken while braaing.
2. Add the chicken pieces to a flat dish in a single layer and coat the chicken well with the marinade. Cover and allow to marinade for 2 hours.
3. Prepare the braai for direct cooking over medium heat (180°C).
4. Place the chicken pieces skin side up on the braai when the coals are at a medium heat. Allow the chicken to cook on one side for approximately 10 minutes before turning the chicken pieces using a braai tong, repeat turning the chicken pieces every 10 minutes until the chicken is cooked through after a total cooking time of about 35 minutes, this allows for even caramelisation and cooking.
5. Baste the chicken using the reserved marinade when turning, be sure to coat the chicken fully.
6. Once cooked through, remove from the braai, transfer to a serving dish, serve and ENJOY!
