INGREDIENTS

1.5kg chuck roast, cut into 3 pieces and trimmed

1 cup beef stock

½ cup Vital Health Foods Ginger & Sesame Soy Sauce

2 tbsp honey

2 tbsp white vinegar

3 cloves garlic, crushed

1 red chilli, finely chopped (optional)


SERVING SUGGESTION:

Jasmine rice

Pickled vegetables, of choice

Fresh coriander leaves

Sesame seeds

METHOD

1. Preheat the oven to 160ºC on fan-assist.


2. Place the chuck roast pieces in a roasting dish and pat dry with paper towel to remove the excess moisture. Set aside until needed. *Chef’s Tip: Use any tough cut of beef, as it will become tender when cooking low & slow.


3. In a measuring jug or bowl, add the beef stock, Vital Health Foods Ginger & Sesame Soy Sauce, honey, vinegar, garlic and chilli. Whisk until combined, then pour the mixture over the beef, ensuring it’s fully coated.


4. Cover the dish with foil and roast the beef for 3 hours or until fork tender.


5. Once the beef is tender, use two forks to shed all the pieces in the roasting dish. Toss the beef in the marinade and drippings.


6. Serve the pulled beef over jasmine rice along with pickled vegetables. Garnish with fresh coriander and sesame seeds and ENJOY!
