INGREDIENTS

2 boxes (600g each) vanilla flavoured cake mix (and all ingredients required for the box mix)

6 boxes (40g each) Nestlé Smarties Chocolate

1 tub store-bought chocolate icing

METHOD

1. Preheat oven and prepare two 23cm cake pans by spraying with non-stick spray and lining with baking paper. Alternatively bake the mix as cupcakes.


2. Mix the cake batter per the box instructions. Chop 1 box of Nestlé Smarties Chocolate and gently fold it into the cake batter. Pour the batter into the prepared cake pans or cupcake papers and bake. Allow to cool completely on a wire rack, then refrigerate until firm, approximately 1 hour.


3. Take a small cutter or object, like a mug or bowl, to mark a circle in the exact center of both cakes. Using a sharp knife, cut out and remove the center piece from both cakes, leaving you with two large cake rings. *Chef's tip: alternatively use a bundt cake tin


4. Divide each cake ring into four quarters. Remove the top-right quarter from the first ring and the bottom-right quarter from the second ring.


5. Look at the inner edges of the remaining two large 'C' shapes. Trim a very small, crescent-shaped piece off the inner edge of both C-shapes where they will meet in the middle to form the figure-eight. This ensures the two main pieces can touch and join cleanly.


6. Carefully arrange the two large C-shaped pieces onto a serving board, pushing the trimmed edges together in the center to form the number '3'.


7. Apply a thin layer of the store-bought chocolate icing all over the cake to seal any crumbs. Chill for 15 minutes. Then, apply a smooth, thick, and even second layer of icing over the entire surface of the assembled number cake. This acts as the "glue" for the Smarties decoration.


8. Sort the remaining whole Smarties by colour. Starting at the edges, lay the whole Smarties onto the iced cake in neat rows or distinct color lines. Press each Smartie gently into the icing to secure the colourful, patterned finish. Alternatively, arrange the cupcakes in a number 3 shape, ice to join the cupcakes together and decorate with Smarties.


9. Refrigerate the decorated cake for at least 15 minutes to allow the icing to set and the Smarties to adhere firmly.


10. When ready, use a sharp knife to slice and serve this fun, festive Smarties Celebration Confetti Cake, and ENJOY!

Smarties Celebration Confetti Cake
