INGREDIENTS
The Maize Base:
1 cup White Star Super Maize Meal
2 cups beef stock
1 wheel feta cheese, crumbled
1 tbsp butter, melted
1 tsp chilli powder
The Toppings:
1 tray (500g) lean beef mince
2 tbsp ground cumin
2 tbsp paprika
2 wheels feta cheese, crumbled
1 cup cherry tomatoes, halved
1 avocado, sliced into fans
Salt & pepper to taste
METHOD
1. Preheat the oven to 180Β°C and grease a 28cm oven-safe or cast iron pan with butter or non-stick spray. *Chefβs tip: A cast iron pan retains and distributes heat evenly, which gives your pap base a beautifully crispy, golden crust on the bottom and sides. If you don't have one, any non-stick oven-safe pan that's 28cm in diameter will work just fine.
2. Add 1 cup of hot beef stock and the White Star Super Maize Meal to the pan. Whisk the mixture then allow it to stand for the maize to hydrate. *Chefβs tip: This ensures the maize grains hydrate evenly for a more even bake.
3. Whisk in the remaining 1 cup of beef stock, melted butter and chilli powder. Crumble the wheel of feta evenly over the mixture. The maize mixture should be about 2cm deep before baking to ensure the result is a thin, yet firm base. Bake in the oven for 35-40 minutes until the edges are golden and the base is firm.
4. While the maize base is baking, heat a splash of oil in a pan over medium-high heat. SautΓ© the beef mince with, cumin, paprika and salt until thoroughly browned and slightly crispy.
5. Once the maize base is firm, remove the pan from the oven. Layer the cooked mince evenly over the top, followed by the remaining feta cheese. Return to the oven for 10 minutes to heat through and slightly soften the cheese.
6. Remove from the oven and arrange the sliced avocado and cherry tomatoes in a vibrant pattern across the top. Add a pinch of salt and pepper to taste.
