INGREDIENTS
500g (3 pieces) fresh chicken breasts, cut into strips
2 tbsp masala spice powder
½ tsp each salt and pepper, to season (optional)
2 cups Fatti’s & Moni’s Bellissimo Rigate
1 tin (400g) diced tomatoes and onions
1½ cups cream
Serving Suggestions:
Parmesan cheese, shavings
Basil leaves
METHOD
1. Preheat your oven to 180°C and lightly grease a large baking dish with non-stick spray.
2. Add the chicken breast strips, masala spice and salt and pepper, if using, to the baking dish. Use a wooden spoon to mix the chicken until it’s evenly coated in seasoning. *Chef’s Tip: Use hot masala for a spicier pasta bake.
3. Add the Fatti’s & Moni’s Bellissimo Rigate, the tinned diced tomatoes and onions, cream and 2 cups of hot water to the dish. *Chef’s Tip: Any quick-cooking vegetables can be added here.
4. Cover the baking dish with foil and bake for 60-65 minutes or until the pasta is al danté.
5. Remove the pasta bake from the oven and mix the pasta through to coat.
6. Garnish the bake with a sprinkling of parmesan cheese and fresh basil. Serve immediately and ENJOY!
