METHOD

1. In a large mixing bowl, add the boiled potatoes and Royal Baking Powder and mash to form fluffy mashed potatoes. Add the russian sausage, cheese and chip spice and mix until combined. *Chefās Tip: the addition of Royal Baking Powder ensures the mash is extra fluffy!ā£
2. Divide the mixture into 18 small balls and set aside.ā£
3. Prepare a breading station with the flour, egg and breadcrumbs in separate bowls.ā£
4. Dip the bites into the flour, then egg mixture, then the breadcrumbs, handling 2-3 at a time, ensuring the bites are evenly coated.ā£
5. Heat 3 cups of vegetable oil in a small, deep pot over medium-high heat, ensuring there is enough oil to fully submerge the bites.ā£
6. Fry the bites, about 4 at a time, for 1-2 minutes until golden brown and the cheese has melted. Repeat this until all the bites have been fried. *Chefās Tip: avoid over frying to ensure bites remain intact or double coat the bites!ā£
