INGREDIENTS

½ onion, diced
2 cloves garlic, crushed
1 red bell pepper, diced
1 tsp paprika
1 tsp ground turmeric
3 cups leftover white rice
2 tins (120g each) Lucky Star Sardines in Peri-Peri Sauce
½ cup frozen peas

Serving suggestion:
Lemon wedges
Parsley

METHOD

1. In a large pan with a lid, heat 1 tbsp of oil on medium heat.


2. Add the onion, garlic, bell pepper, paprika, and turmeric and sauté for 1 minute until fragrant. Add the rice and ½ cup of water and stir until well combined. *Chef’s Tip: The perfect opportunity to use leftover rice!


3. Carefully place the Lucky Star Sardines in Peri-Peri Sauce over the rice and pour the remaining sauce over the entire dish. Sprinkle the peas over the dish. *Chef’s Tip: Add any of your favourite quick-cooking veggies!


4. Cover the dish with a lid and allow it to steam for 5-7 minutes until all the liquid has been absorbed.


5. Garnish the dish generously with freshly chopped parsley, serve with lemon wedges, and ENJOY!
