INGREDIENTS
For the mocktails:
2 tsp fine sea salt
2 tsp castor sugar
½ tsp chilli powder
2 tsp grapefruit zest
1 cup pomegranate seeds
3 cups grapefruit juice
2 limes, halved, plus extra for garnishing
4 cans (300ml each) Schweppes Premium Pomegranate Flavoured Drink
Fresh grapefruit slices, for garnish
Edible flowers (optional), for garnish
For the popsicles:
10 party balloons
2 tsp fine sea salt
2 tsp castor sugar
½ tsp chilli powder
2 tsp grapefruit zest
Fresh grapefruit, peeled and sliced
Edible flowers
½ cup pomegranate seeds
½ cup grapefruit juice
1 lime, halved
2 cans (300ml each) Schweppes Premium Pomegranate Flavoured Drink
METHOD
1. Prepare the spice mix by combining the sea salt, castor sugar, chilli powder and grapefruit zest in a small bowl, then transfer the mixture to a small plate.
For the mocktails:
2. To make the decorative ice, divide the pomegranate seeds and grapefruit fruit juice between two ice trays and freeze until solid.
3. Use a lime wedge to carefully apply lime juice on the side of the glasses, about a quarter of the surface area. Dip the glasses into the spice mix ensuring they are generously coated.
4. Add the decorative ice to the mocktail glasses along with the juice of half a lime in each.
5. Top each glass with a can of Schweppes Premium Pomegranate Flavoured Drink, garnish beautifully with grapefruit slices and edible flowers and ENJOY!
For the popsicles:
6. Make decorative ice balls by adding extra grapefruit slices and edible flowers to 8-10 balloons. Place the opening of each balloon under a tap and fill with about 1-2 cups of water. Close each balloon and freeze until solid.
7. Divide the fresh grapefruit slices, edible flowers, pomegranate seeds, grapefruit juice, the juice of one lime and the Schweppes Premium Pomegranate Flavoured Drink between a 6-hole popsicle mould, allowing a 1cm space to add the spice mix later. Freeze for about 1 hour.
8. Once the popsicles are semi-frozen, divide the spice mix over the popsicle mixture, ensuring to gently press it into the mould. Insert a popsicle stick into each mould and freeze for 2 hours or until completely solid.
9. Before serving, remove the balloons from the freezer. Carefully peel back the balloon layer revealing the ice. Place the ice in a serving tray or bowl.
10. Once the popsicles are frozen, place the popsicle mould under running water to remove the popsicles easily, serve over the decorative ice and ENJOY!
*Chef’s Tip: Alternatively, use paper cups instead of a mould!
