INGREDIENTS

2 tins (410g each) creamed sweetcorn

4 large eggs

¼ cup (60g) Selati Brown Sugar

¼ cup (60ml) melted butter

2–3 fresh jalapeño chillies, finely chopped (adjust to heat preference)

¼ cup (32g) self-raising flour

1 tbsp (15g) baking powder

1 tsp (5g) salt


SERVING SUGGESTION:

Sliced jalapeños

Coriander

Braai meat

METHOD

1. Preheat oven to 180°C and spray and line a 20cm x 20cm baking dish.


2. In a large mixing bowl, whisk together the 2 tins of creamed corn, eggs, Selati Brown Sugar, melted butter and jalapeños.


3. Add the self-raising flour, baking powder and salt. Whisk gently until just combined.


4. Pour the batter into the greased dish and bake for 45–50 minutes, or until golden and set in the centre.


5. Allow to cool slightly before serving. Garnish with more jalapenos and fresh coriander and ENJOY!
